One Protein – One Tortilla – 5 Ways: Thanksgiving Leftovers Edition

Your guests have gone home, cleanup is complete and now you’re staring at a mountain of leftovers. Rather than “enjoying” turkey sandwiches for a month, here are some tasty and easy recipes to liven up those leftovers.

Note: Some recipes require a few additional ingredients to your traditional turkey meal. But don’t worry; having more cheese or jalapeños on hand is never a bad idea.

1) Turkey & Sweet Potato Quesadillas

Turn that turkey into a flavorful quesadilla! Add a new twist to your traditional cheese quesadilla by adding turkey and sweet potatoes. Don’t forget the cranberry sauce for dipping.

2) Turkey, Red Bean and Corn Chili

Shredded turkey is a delicious, healthy substitute for this or any of your favorite chili recipes. Plus, everyone knows that if you make a chili recipe healthier, you get to have twice as much (kidding… maybe). Cut Azteca flour tortillas into strips and bake for a crunchy complement to this warm, winter-friendly chili.

3) Thanksgiving Leftovers Shepherd’s Pie

It’s been a couple hours, so why not put your casserole dish back to work? Start with a base layer of Azteca’s Soft and Tender Flour Tortillas (which also happen to be the perfect soft and light tortilla for any great bake or pie). Add a layer of stuffing, top with cranberry sauce, turkey and carrots (or any other hardy root vegetable). Then drizzle with gravy before topping with a layer of mashed potatoes. Be sure to spread the potatoes evenly to cover the casserole dish from side to side. Cook 35-40 minutes at 350° degrees and enjoy!

4) Turkey Nachos

Easy and delicious! Cut Azteca flour tortillas into wedges and bake. Top with shredded turkey, corn, beans, way too much cheese, jalapeños, sour cream… stuffing? Cranberry sauce? Nothing is off limits. Make it your own!

5) Turkey Enchiladas – Leftovers Style

Many enchilada recipes claim to incorporate Thanksgiving leftovers but this one delivers. Roll mashed potatoes, stuffing, shredded turkey and beans (green or otherwise) into several burrito-sized Azteca Soft and Tender tortillas. Arrange the rolled tortillas in a coated baking pan and sprinkle with cheddar or cotija cheese (your choice!). Bake for 25-30 minutes at 350°degrees. Top with a dollop of cranberry sauce before serving. For an added burst of flavor, substitute green chiles for the beans.
