Azteca Mexican Lasagna Recipe

Ingredients List

1 package refrigerated Azteca flour tortillas
1 pound ground beef
1 can (17 oz) whole kernel corn, drained
1 cup salsa
1 can (15oz) tomato sauce
1 package taco seasoning mix
2 eggs
1 container (16oz) cottage cheese
1 teaspoon oregano
1 ½ cups cheese blend (Cheddar and Monteray Jack), shredded


  1. Brown 1 pound of ground beef in a frying pan
  2. Drain, and add taco seasoning, corn, tomato sauce, and salsa
  3. Simmer 5 minutes, stirring frequently
  4. In a separate bowl, mix eggs, cottage cheese, and oregano
  5. Add layer of tortillas to baking dish
  6. Top with half the beef mixture, then half the cottage cheese mixture
  7. Spread evenly, then add a second layer of tortillas to baking dish
  8. Top with remaining beef mixture, then remaining cottage cheese mixture
  9. Spread evenly, then add shredded cheese
  10. Bake at 350 degrees for about 15 minutes
  11. Top with black pepper, and serve!
